I am not good at following recipes. I will admit it now. I read them, and believe me, I have a lot of recipes books, but it is rare that I actually follow one properly. I tend to use them for ideas, then make my own. Does this always work?? Hell no.. But yesterday – the stars aligned and my attempt at raspberry pancakes paid off.
My daughter is allergic to eggs and nuts, which rules out a lot of foods, so I am always trying to find alternatives, or make up my own. She often has porridge for breakfast with something delicious mixed through, however we are trying to sit down together more as a family to help her learn to eat with a knife and fork – which she is showing a lot of interest in, so I figured pancakes might help! I haven’t made them for a while though as I stupidly thought that egg was an integral part. Turns out, they are super easy to make egg free, and you don’t have to use an alternative.
I decided to use gluten free flour as I didn’t have a wheat alternative like spelt on hand, and knowing that can change the taste a little I added some raspberries in that we had picked fresh from my fathers veggie plot.
Gluten Free, Egg Free Raspberry pancakes
- 1 cup of gluten free self raising flour (or wheat/spelt flour with raising agents)
- 1 cup of milk of your choice (plus an extra 1/4 cup just in case as GF flour can be thirsty)
- 1 tsp of coconut sugar (or maple syrup would work too)
- 1 tsp of oil – I used MCT oil
- 8-10 Raspberries
Mix your dry ingredients, then add the wet and either stir, or used a stick blender to ensure the flour is mixed through, and the raspberries are broken down. Of course you can do this by hand and leave berry chunks too if desired. By using the stick blender it makes a beautiful whip – but don’t overmix or they may be tough.
Heat a frying pan and add some coconut oil, organic butter or organic ghee, and fry in batches.
Top with berry compote, and greek yoghurt
This recipe made 9 small pancakes.
They were definitely toddler approved, and I have to say – they were a hit with my hubby too! I will be making more to put in the freezer for quick snacks, and daycare lunch boxes.
